Peach and Jasmine Green Tea Sorbet Pops Recipe - Grey's Posy

It’s July, and I’ll bet you’re craving an invigorating icy-cold snack. Made with just peaches, green tea, coconut water and sugar, these popsicles are hassle free and 100% delicious!

The body of these popsicles is made up primarily of peaches, not water or juice, making them more tender and less icy than traditional popsicles. They’re smooth and fragranced lightly with floral jasmine, and earthy green tea. These popsicles are just-sweet-enough, not overly sweetened. If you prefer, you can add more sugar to the syrup or substitute your favorite fruit juice for the coconut water.

Makes 12 popsicles

You will need:

  • 12, 100ml. (just over 3 ounces) popsicle molds

  • 4 cups of frozen peaches

  • 1 ½ cups of coconut water

Syrup-

  • 2 jasmine green teabags

  • ½ cup of granulated sugar

  • ½ cup boiling water


Place the ½ cup of sugar and tea bags in a small mixing bowl, pour the boiling water in and stir until the sugar has dissolved. Steep the tea till the syrup is completely cool. Remove the teabags, and blend the cooled syrup, coconut water and peaches until you have a smooth mixture, with no lumps.



Fill the popsicle molds and tap them firmly on your work surface, to remove bubbles. Freeze for at least 3 hours.


Run warm water over the popsicles to un-mold.
