Champagne Strawberries and Whipped Cream Recipe - Grey's Posy

So, this month our projects are hassle-free and great for when you’re short on time, but want something pretty, and delicious in this case. In keeping with the romantic theme of the month, we thought this dessert would suit February nicely. The strawberries are delicately sweetened, and whipped cream makes everything dreamy.

You can substitute a different berry for the strawberries, or use another fruit (stone fruit would work best; peaches, cherries, plums etc.)

Champagne Strawberries-

  • 1 16oz. package of strawberries (about 2 cups)

  • ½ cup of granulated sugar

  • ½ cup of champagne (demi-sec)

Wash and cut the strawberries into slices. Place all of the ingredients in a medium saucepan over medium heat, stirring occasionally, and cook for 10-15 minutes or until the strawberries are tender. The alcohol in the champagne will cook out, but the flavor should remain.

Whipped Cream-

Makes roughly 2 cups

  • 1 ¼ cups of heavy whipping cream

  • 2-4 tbsp. of granulated sugar (to taste)

Whip the cream and sugar together in a mixing bowl until you have soft peaks that keep their shape.

Serve in dishes, spoon the whipped cream over the strawberries, or vice versa, whichever you prefer.

This dessert would be a fantastic addition to cake or ice cream, or both ;)
